Ingredients
  

  • 2 cups mixed lettuce or salad greens
  • 1 cup cucumber sliced
  • 1 cup cherry tomatoes halved
  • ½ cup snap peas sliced
  • ½ cup grated carrot
  • ¼ cup red onion thinly sliced
  • ¼ cup fresh herbs parsley, mint, or basil
For Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Prepare the vegetables

    Wash all vegetables thoroughly. Slice cucumber, halve cherry tomatoes, grate carrot, and thinly slice onion.
  2. Build the salad base

    Add lettuce to a large bowl. Layer cucumber, tomatoes, snap peas, carrot, and onion on top.
  3. Make the dressing

    In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
  4. Toss the salad

    Pour dressing over the vegetables and gently toss until evenly coated.
  5. Add toppings and serve

    Top with feta cheese, seeds, or avocado if using. Serve immediately for best texture.

Notes

  • Don’t add dressing too early. I’ve done that before, and the lettuce turns soft fast. Add it just before serving.
  • Keep a mix of textures. Crunchy + fresh works way better than everything soft. That’s what makes this salad feel satisfying.
  • Fresh herbs matter more than you think. If you skip them, the salad still works, but it won’t taste as fresh.
  • Taste before serving. A small pinch of salt or extra lemon can fix everything instantly.
