Ingredients
  

  • 2 ripe peaches sliced
  • 3 cups fresh greens arugula, spinach, or mixed greens
  • ½ cup crumbled feta cheese or vegan alternative
  • ¼ cup chopped walnuts or almonds lightly toasted
  • 1 small cucumber sliced
  • ¼ small red onion thinly sliced
  • Fresh mint leaves optional
For Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice or balsamic vinegar
  • 1 tsp honey optional
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Wash and dry all fresh produce. Slice the peaches just before assembling.
  2. In a large bowl, add the greens as the base.
  3. Layer sliced peaches, cucumber, and red onion on top.
  4. Sprinkle crumbled feta and toasted nuts evenly.
  5. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  6. Drizzle dressing over the salad just before serving.
  7. Gently toss and serve immediately.

Notes

  • Use ripe but firm peaches for best texture
  • Add grilled paneer or chickpeas for extra protein
  • Toast nuts lightly for better flavor
  • Avoid overdressing to keep it fresh and light
