Ingredients
  

  • 4 cups fresh baby spinach
  • 1 ½ cups fresh strawberries sliced
  • ¼ cup red onion thinly sliced
  • ¼ cup sliced almonds or pecans
  • ¼ cup crumbled feta cheese optional
For Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Prepare the ingredients

    Rinse spinach and strawberries thoroughly. Pat the spinach dry. Slice the strawberries and thinly slice the red onion.
  2. Make the dressing

    In a small bowl, combine olive oil, balsamic vinegar, honey, and Dijon mustard. Whisk until smooth. Add salt and pepper to taste.
  3. Assemble the salad

    Add spinach to a large bowl. Top with strawberries, red onion, nuts, and feta cheese.
  4. Toss and serve

    Drizzle dressing over the salad and toss gently until everything is coated. Serve immediately.

Notes

  • Pat the spinach dry properly. If it’s wet, the dressing just slides off and sits at the bottom. Learned that the hard way.
  • Don’t overload onions. A little adds flavor, but too much takes over the whole salad.
  • Toast the nuts for 2–3 minutes if you can. It makes a noticeable difference in taste and crunch.
  • Add dressing right before serving. Otherwise, the spinach gets soft pretty fast.
