Prepare the ingredients
Rinse spinach and strawberries thoroughly. Pat the spinach dry. Slice the strawberries and thinly slice the red onion.Make the dressing
In a small bowl, combine olive oil, balsamic vinegar, honey, and Dijon mustard. Whisk until smooth. Add salt and pepper to taste.Assemble the salad
Add spinach to a large bowl. Top with strawberries, red onion, nuts, and feta cheese.Toss and serve
Drizzle dressing over the salad and toss gently until everything is coated. Serve immediately.
Notes
- Pat the spinach dry properly. If it’s wet, the dressing just slides off and sits at the bottom. Learned that the hard way.
- Don’t overload onions. A little adds flavor, but too much takes over the whole salad.
- Toast the nuts for 2–3 minutes if you can. It makes a noticeable difference in taste and crunch.
- Add dressing right before serving. Otherwise, the spinach gets soft pretty fast.
