Ingredients
  

  • 3 cups corn kernels fresh, frozen, or canned
  • ½ cup mayonnaise
  • ¼ cup sour cream or Greek yogurt
  • ½ cup crumbled feta or cotija cheese
  • 1 small red onion finely chopped
  • 1 –2 cloves garlic minced
  • 1 tbsp lime juice
  • ½ tsp chili powder adjust to taste
  • ¼ tsp smoked paprika optional
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp fresh cilantro chopped

Method
 

  1. Heat a pan over medium-high heat and add the corn.
  2. Cook until slightly charred, stirring occasionally for even browning.
  3. Remove from heat and let it cool slightly.
  4. In a large bowl, mix mayonnaise, sour cream, lime juice, garlic, chili powder, salt, and pepper.
  5. Add the charred corn, chopped onion, and cilantro.
  6. Toss everything until well combined.
  7. Sprinkle crumbled cheese on top and mix lightly.
  8. Taste and adjust seasoning if needed.
  9. Serve warm or chilled.

Notes

  • Lightly charring the corn enhances flavor
  • Adjust spice level based on preference
  • Use fresh lime juice for best taste
  • Add beans or paneer to make it more filling
