Ingredients
  

  • 4 large carrots peeled and grated
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon fresh parsley chopped
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Prepare the carrots

    Peel and finely grate the carrots using a box grater or food processor. Place them in a large mixing bowl
  2. Make the dressing

    In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until well combined.
  3. Combine everything

    Pour the dressing over the grated carrots and toss well so the carrots are evenly coated.
  4. Add toppings

    Add chopped parsley and any optional ingredients like nuts or dried fruits.
  5. Let it rest

    Let the salad sit for about 5 minutes before serving so the flavors can blend.

Notes

  • Grate the carrots finely. I tested thicker shreds once, and the texture felt slightly tough. Finer shreds absorb the dressing better and taste smoother.
  • Taste the dressing before mixing. Sometimes a tiny adjustment in lemon or honey changes everything.
  • Don’t skip the resting time. Even 5 minutes makes the salad taste more balanced.
  • Fresh carrots make a difference. Pre-shredded ones work, but they feel drier.
