Ingredients
  

  • 2 cups bow tie pasta farfalle
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber chopped
  • ½ cup red onion finely sliced
  • ½ cup bell peppers chopped
  • ½ cup olives optional
  • ½ cup feta cheese or mozzarella optional
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or vinegar
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Cook the bow tie pasta according to package instructions until al dente.
  2. Drain and rinse under cold water to cool it completely.
  3. Transfer the pasta to a large mixing bowl.
  4. Add cherry tomatoes, cucumber, onion, bell peppers, and olives.
  5. In a small bowl, mix olive oil, lemon juice, oregano, salt, and pepper.
  6. Pour the dressing over the pasta mixture.
  7. Toss everything gently until well combined.
  8. Add cheese if using and mix lightly.
  9. Chill for 15–20 minutes before serving for best flavor.
