Avocado Salad

Ingredients
  

  • 2 large ripe avocados cubed
  • 1 cup cherry tomatoes halved
  • 1 small cucumber diced
  • ¼ red onion finely chopped
  • 2 tbsp fresh cilantro optional
For Dressing
  • Juice of 1 fresh lime
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Prepare the avocados

    Cut the avocados in half, remove the pit, and scoop out the flesh. Cut into medium-sized cubes.
  2. Chop the vegetables

    Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.
  3. Make the dressing

    In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
  4. Combine everything

    Add tomatoes, cucumber, onion, and cilantro to the avocado bowl. Pour the dressing over the top.
  5. Toss and serve

    Gently toss everything together. Serve immediately for best texture and flavor

Notes

  • Don’t overmix. I did that once and ended up with accidental guacamole. Keep it gentle.
  • Use ripe avocados, but not too soft. If it feels mushy, it’s already gone too far.
  • Taste your dressing before adding. A little extra lime can fix most flavor issues.
  • Add dressing right before serving. Otherwise, things get watery and lose that fresh feel.
